Comparing Wii U version and Switch version is like comparing a console game with a PC game. Try using unsafe mode in the CPU settings, testing the performance tweaks, it will make the game run faster. As for the 60 FPS, have in mind that the 60 FPS DLC is the only way to go above the 30 FPS, you can download the DLC from Yuzu website. This means BoTW on yuzu will, best-case, look as good as the Wii U version, never better. The above also applies to Switch ports of other Wii U games like MK8; they run far better on Cemu.
