I was so exited to see they finally implented horses! exactly what this game needed, should have been there from the start if you ask me. 10.000 money for a horse is quite expensive but doable, so i created a new playthough, thinking id just play it slow and earn money via trading and other scams. Yes, it can sleep with the saddle and the saddlebag on. How could you do that? I always return the horse to the stable each day and remove the saddle and saddlebag, even if I don't go to bed myself (which, from what I can tell, means my horse doesn't sleep either). #2.
