Edit: I updated my Graphic drivers and I was able to load a save, but the game still crashed upon entering a Shrine Edit 2: Launched the game through BCML again, it seems to have fixed it. I think the issue may have just been with my mods.

You could also use a save editor I guess, since Epona can't be obtained by normal means apparently.
