Rapiers are best off as uninfused weapons. The base damage+scaling+140/120 counter rating+leo ring (12,5% counter boost) is very powerful. Maybe you're lagging then because it's more than possible to punish the R1 spam. Heck, I use twin maces against estoc wielders and still win. Have a medium shield and soak up their first hit (usually just a poke) and then parry. When they panic hit them with an art to close the gap and lock them down.

The Estoc has also a very long reach. Don't forget, if you use it 1 handed, the R2 gives you a horizontal slash. The Estoc is a very versatile weapon, and it can carry you through the whole game, but of course it plays different than a heavy two handed sword.
