As far as cataphract protection I like t4 falx for it (and pretty for everything else aswell). But if you’re looking for a shield infantry for anti cav. I’d recommend the sturgian heavy axe. The spear is good too but I think the axe is a little better especially against the more stay-put-and-swing type cavalry like the cataphract.
